Not Your Average Caprese Salad

For the record, I’m no food blogger.  I’m pretty content just eating clean, not making a big deal out of it and moving on to the next task for the evening.  I don’t like to spend a lot of time in the kitchen to say the least.  PLUS, I’m single, I cook for one, there’s not a whole lot of excitement in that for me.  I’d rather be enjoying the outdoors or off with friends.

But tonight, I had a huge craving for some summer-time freshness! My favorite salad has always been the

salad: fresh mozzarella, tomatoes and basil. Except I hate basil. Well, I decided to take a little twist on an Italian favorite (I’m Italian so it’s allowed).

Ingredients:

1. large handful of baby spinach

1. small tomato, sliced

3. small mozzarella balls, I just shred them with my fingers

a few greek olives

some halved pecans

1 steak-cut of your choice, I used a thinly sliced, grass-fed chuck

As I grilled the steak (only with a little salt and pepper-I’m a pretty plain person), I threw together the spinach, tomatoes, mozzarella, olives and nuts decorated nicely so I could take a photo for you all.  When the steak was done, I sliced it up and threw it on top of the salad, letting the juices out on the salad.  I drizzled some balsamic on there, took a picture and ate up!

Oh, and I recommend unsweetened iced tea in a mason jar. It just tastes better that way.
