I wouldn’t say that I am someone who loves to cook. I don’t mind it if I have a good recipe, that’s easy, and preferably has ten ingredients or less. I also really appreciate recipes that come with pictures. Nom Nom Paleo has some great recipes that are quick and easy and I recently went out of my comfort zone and tried making mango salsa paired with her Crispy Smashed Chicken. She has an iPad app that comes with step by step pictures.

Crispy Smashed Chicken

-4 skinless boneless chicken breasts
-2 tbsp ghee or fat of your choice
-1/2 cup coconut flour
-1 tbsp kosher salt
-1/2 tsp garlic powder
-freshly ground black pepper
-lime wedges (optional)

Put ghee (or other fat) in a skillet to melt. Mix your remaining ingredients minus the lime wedges. Dredge chicken through the mixture and pat off any excess. Once the skillet is hot and ghee has melted, plop your chicken in and cook for 3-4 minutes per side. My chicken was a little thicker so it actually took about 10 minutes per side. Always use a meat thermometer if in doubt.
