I just made this one from Paleo in a Pinch the other night, and it was delish! I was nervous about cooking my first roast. It seems like it’s up there on that pedestal with cooking the perfect Thanksgiving turkey. But, it was actually really easy.
I used a yellow and white sweet potato and a bunch of carrots for the veggies. As for the broth, I used store-bought from my local co-op. Shhh! The beef came from the half grass-fed cow we purchased awhile back. (Thanks Marksbury Farm!) If you have the opportunity to do this, DO IT! So good.
I made this on a Sunday. That just reminded me of that song “I Met Him on a Sunday” by the Shirelles. Good song. It’s in one of my fave movies, “Because I Said So.” Go watch it. Because I said so! He he. But I digress. This roast is the perfect meal for a weekend, since it takes some time. The prep and actual work you have to do is easy though. It’s awesome for someone like me who really doesn’t like cooking!
